Visan Côtes du Rhône Villages 2009, Rhône Valley: Soft and spicy with hints of leather and cherry, this fruity wine is perfect for pheasant and game birds that have not been hung for too long. The wine’s freshness is a perfect complement to juicy young partridges too.
Tapiz Syrah 2006, Argentina: Top-quality Syrah from one of Argentina’s very best producers, this is a superb example of the syrah grape grown in the new world — spicy and beautifully structured with flavours of roast meat and bacon fat. Ideal with most game.
Primitivo Puglia 2009, Italy: From the warm climate of the heel of Italy this Primitivo (or Zinfandel as the Californians call it) is delightfully rich and soft and is a perfect match with venison or grouse.
Trentham Petit Verdot 2006, Australia: A wonderfully ripe and dark-fruited wine with flavours of blackcurrants and eucalyptus, this is a great match with mallard or any other really rich game including wild boar sausages and well-hung grouse.
