Joy Webb, who helped teach during the women’s practical cookery lessons, was confident that her family’s shepherd’s pie recipe would prove a great dish for them to cook as it calls for baked beans to be mixed into the meat. She says the addition of baked beans not only encourages young children to taste the dish, but enhances its flavour too. Also, it is really easy to cook.
YOU WILL NEED: Two or three large potatoes 1oz (25g) butter 8oz (250g) minced lamb One medium onion – chopped fine 1 tbspn Worcester sauce 1 tspn dried basil One large tin baked beans Oxo cube 1 tbspn plain flour A little water A little oil to cook onions.
Method: Peel and cut the potatoes into 1in cubes and boil in water until soft, then strain and mash, incorporating the butter.
Place the chopped onion in a frying pan to which a drop of oil has been added and cook for a few moments, then add the minced lamb and continue cooking over a moderate heat until the meat begins to brown.
Crumble the Oxo cube into the mix and then stir in the flour.
Add the baked beans and a little water, then stir in the basil and the Worcestershire sauce, adding a little more water if you think it needs it.
Cook through on a low heat for about ten minutes then spoon into an oven-roof dish.
Carefully spread the mashed potato on top and brown in a hot oven or under the grill until the potatoes begin to take on a delicious golden colour.
