AN Oxford fish market has said it is determined to put an ‘upsetting’ low hygiene rating behind it and get back up to five stars.
Osney Food Shed, based in Osney Mead, was originally given a rating of just one star – meaning 'major improvement necessary' – following an inspection in March.
The Fish 4 Lunch restaurant that is also located in the building was not covered by the visit. It is rated four stars.

Issues over missing temperature records, staff training, food labelling and a damaged ice machine were all raised during the surprise inspection by Oxford City Council's health team.
Following an inspection last week, however, the business is back to four stars, meaning standards are now judged to be 'good'.
Shop manager Darren Bryson said that was ‘not good enough’ for the business though and they were determined to regain the top rating, which it was awarded in 2017.

He said: "The one-star rating was very upsetting. Immediate action was taken to rectify the points raised in the report.
"Management practices weren’t good enough. Corrective action was taken, more training was given to staff and a four star rating was given."
Mr Bryson said the top score was only 'narrowly missed' during a visit on June 25, adding: "While we respect the four star rating we will soon be applying again to the council for an unannounced revisit to improve to a five star rating.

"We will not be content until five stars is achieved."
The initial report from March stated there was an 'overall lack of understanding' of the current roles and responsibilities of staff and the daily operation of the food business.
It added: “No clear food safety management system was in place identifying the hazards and associated checks or procedures to ensure your food business is being adequately run and managed."
Concerns over temperatures included fresh shell quail eggs being kept at room temperature despite the instruction on the packaging saying they should be kept below 5C.
An ice chute was also found to be damaged making it 'unable to be adequately cleaned'.

On food labelling the report stated: “A number of products that had been decanted and repacked into smaller size packs, such as frozen fish cakes, were available for retail sale but only marked with the name of the product and an unspecified date."
The most recent inspection praised the improvements made by Osney Food Shed, adding: "Please ensure these standards are maintained."
